Corn and beef: chilean Pastel de choclo


Chilean pastel de choclo is a classic and iconic dish of summer. It is basically a meat stew covered with a baked sweet corn paste. Is traditional of the Chilean Gastronomy, but is not easy to prepare, cleaning and grating the corn is a work hard!! Besides, you have to prepare the meat stew, you can prepare it the day before, so you can have it ready to put it together with the corn paste. Well... clearly cooking it is not my favorite part, that's why I enjoy this dish more when I can buy it at a summer fair, as I told you it is a classic of the season, and it is not expensive compared to other dishes. 

So although it is not a healthy dish, since it has a lot of calories... it is nutritious and delicious! If you have the opportunity to visit the south of Chile and you come across gastronomic fairs you must try the pastel de cholo. 

My personal tip is to serve it with Chilean-style salad and sprinkle sugar on the cake. I love the mix between the salty meat and the sweetness of the corn.

  1. Well accomplished. There are bits that seem copy-paste though. Remember that adjectives go before nouns: "work hard" is different from "hard work"
